These fritters are incredibly easy and quick to make. They are a good after-school snack for children, or serve with a fried egg and some salsa for nutritious breakfast or light meal.

Ingredients
- 150g sweetcorn (canned is fine)
- 200g plain flour
- 1 egg, about 6g
- 1 spring onion, about 50g (trimmed and roughly chopped0
- 1 or 2 green or red chillies, finely chopped (to taste or optional)
- Small handful of coriander, about 5g (leaves only, finely chopped. Parsley may be substituted)
- 150ml milk
- 4 tablespoons water
- 1 teaspoon baking powder
- 1 teaspoon of salt
- Freshly ground black pepper
- Vegetable oil for frying
Instructions
- Put all the ingredients in bowl, mix well until you get a smooth batter and the vegetables are well coated with the batter.
- Heat up a tiny bit of oil in a frying pan, and add a tablespoon of batter for each fritter, making sure not to overload the pan
- Alternatively, make one large fritter and top with some salsa to serve.
